Is hurting or actually killing someone in self defense illegal?

What if someone attacks you with a weapon or steals something expensive from you on the street and starts running away? Would it be illegal to attack him in both cases?

It is legal to defend yourself from attack. You may prevent the attack, although some jurisdictions require that your first mode of defense be flight if possible. Stop the attack, NOT retaliate.

If the person flees, by definition they are NOT attacking you, and any violence at that point is illegal.

Christians, this is a spin off from a question, is killing wrong if it is self defense?

So what if you intentionally severely beat a 7 year old child then the dad is in such rage he comes to kill you but you kill him first. It is self defense isn't it? Does that mean you shouldn't suffer the consequences of killing a man since you Christians say self defense is not murder.

The father has the right to protect his child. This means the one beating the child has no right to defend himself. So, the person beating the child would in fact be guilty - on both counts. The self-defense argument would not apply at all.
